Biography
I originally began my work as a butcher and eventually developed to become a meat inspector. Then, with my interest in the technical aspects of meat, meat preservation and meat packing, I became a meat technologist. My career led me to be the group technical manager for the largest beef producer in Europe and it was during this time that I applied for and was awarded my Churchill Fellowship.
The benefits of my Fellowship were that I could examine many of the procedures used by people with similar work in the USA and those connections continued after my Fellowship was over. There was a good number of messages from both sides of the Atlantic seeking and receiving all kinds of advice from those connections.
Although I am now retired, I have written a number of books concerning meat and they have all been well received. Currently I have been asked to produce the third edition of The Meat Hygienist's Pocket Book for the Association of Meat Inspectors. I wrote the original edition (and the second edition) and donated any rights to royalties and the copyright for the book to that association.
